Instructions
For the Cake
  1. Preheat oven to 350. Spray two 9-inch cake pans with non-stick spray.
  2. In a small bowl, mix together the flour, baking powder, baking soda and salt.
  3. In a large bowl, cream together the coconut oil and brown sugar. Add the vanilla and mashed bananas.
  4. In another small bowl, add the apple cider vinegar to the milk and let it sit for a couple of minutes.
  5. Add the banana mixture to the dry mixture. Stir well and add in the milk mixture until just combined. Divide batter into the two cake pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool in their pans for 20 minutes and then invert onto a plate or cooling rack to finish cooling.
  7. Frost with Peanut Butter Frosting, using a layer between the cakes and then layer the sliced bananas on top. Drizzle melted chocolate chips over the banana slices for extra yumminess and prettiness.
For the Frosting
  1. With a mixer, beat together cream cheese, margarine and peanut butter. Add powdered sugar and blend until smooth (or as smooth as you prefer. I use chunky peanut butter so it’s never entirely smooth)
