For the glaze

  1. Preheat oven to 350.
  2. Spray a bundt pan with non-stick cooking spray.
  3. Pour chopped walnuts evenly over the bottom (which will be the top once it’s cooked) of the pan.
  4. In a mixing bowl, combine flour, sugar, salt, baking powder, and baking soda and stir until well mixed.
  5. In a separate bowl, combine applesauce, almond milk, vanilla and mix well. Add olive oil and rum, and stir to combine.
  6. Add the wet mixture to the dry ingredients and stir until combined but don’t overmix.
  7. Pour cake batter over the walnuts in the bundt pan and bake for 25 minutes.
To prepare the glaze
  1. Melt Earth Balance in a saucepan over medium heat.
  2. Stir in water and sugar and bring to a boil.
  3. Continue stirring as the mixture boils for five minutes. Then remove from heat and stir in rum.
  4. Once the cake has cooled in the pan for about 30 minutes, empty the pan onto a large plate and then slowly pour the glaze over the top, letting it soak into the cake as much as possible.
Pure and Simple Cake Mix Instructions
  1. Prepare bundt pan with cooking spray and chopped walnuts.
  2. Add to cake mix: 1 Cup plain, unsweetened applesauce, 1/2 Cup water, 1/2 Cup extra virgin olive oil, 1/2 Cup rum
  3. Mix well and pour into bundt pan over chopped nuts.
  4. Bake at 350 degrees for 25 minutes, or until a toothpick inserted in the center comes out clean. Let cool and then pour glaze over the top of the cake, allowing it to soak in as much as possible.
