This cake is unbelievably good. I can’t even begin to describe how delicious it is. It’s like apple pie baked into a cake. And it’s vegan. Recipe is adapted from The 100 Best Vegan Baking Recipes.
Vegan Apple Cinnamon Cake
- 1 1/2 cups whole wheat pastry flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 2/3 cup sugar + 2 Tbsp. separated
- 1/2 cup softened vegan butter (I use Earth Balance)
- 3/4 cup applesauce
- 1 tsp. vanilla
- 1/4 cup soy or almond milk
- 2 tsp. cinnamon
- 3 cups peeled, chopped apples
Preheat oven to 350. Spray an 8 inch pan with non-stick cook spray and set aside.
Combine flour, baking powder and salt in a medium sized bowl. In a large bowl, cream together 2/3 cup sugar with margarine. Add applesauce, then vanilla and milk. Add dry ingredients to wet ingredients until just mixed.
Mix together the remaining 2 Tbsp. sugar and the cinnamon and then combine 2 tablespoons of the cinnamon sugar mixture with the chopped apples. Gently fold apples into the batter mixture.
Spread the batter into the prepared pan. Sprinkle the rest of the cinnamon sugar mixture over the top. Bake for an hour, or until toothpick comes out clean. Let cool completely before serving.
